Foundational Kitchen Techniques and Pastry
Students begin their culinary education by focusing completely on physical kitchen methods and baseline food preparation skills during their first year. The initial curriculum guides them through basic culinary, pastry and baking, food commodities, and butchery. Rather than reading from textbooks alone, students spend their days inside physical commercial kitchens practicing fundamental knife skills, carcass breakdown, and basic dough techniques under close supervision. They also complete training in kitchen and hygiene management to master food storage rules and chemical sanitation codes safely.
Advanced Regional Cuisines and Cold Kitchens
As students move into their second year, the training shifts toward intermediate execution, intricate plating styles, and regional taste profiles. Through specialized modules like garde manger, Malaysian cuisine, and Aseana cuisine, candidates explore different spices, traditional ingredients, and cold presentation buffets. They practice preparing terrines, balancing local curries, and arranging decorative platters. The curriculum also introduces scientific data parameters through nutrition and sensory analysis, where students learn how cooking processes alter vitamin contents and flavor receptors.
Management Systems and Practical Placement
Academic coursework at the BERJAYA Faculty of Culinary Arts mixes technical kitchen hours with essential restaurant business frameworks. Students look at commercial rules through menu planning and development, food and beverage cost control, introduction to business, and managing people in the service industry. A major milestone of the Diploma in Culinary Arts is the compulsory 16-week internship during the final trimester. Supported by the institution's networks, this training places students inside active resort kitchens or fine dining establishments, helping them practice handling busy dinner rushes, managing line production, and navigating a real work environment before graduating.
