Foundational Doughs and Flour Mechanics
Students begin their pastry education by focusing completely on physical baking methods and essential raw ingredient handling during their first year. The initial curriculum guides them through basic culinary, foundation in baking, fundamentals of pastry, and food commodities. Rather than reading from text blueprints alone, candidates spend their days inside physical commercial kitchens practicing temperature monitoring, gluten activation, and dough hydration properties under close supervision. They also complete training in kitchen and hygiene management to master commercial food safety regulations and workplace safety standards safely.
Specialty Confectionery and Sugar Artistry
As students enter their intermediate terms, the training shifts toward intricate sugar design, artisan assembly, and complex regional dessert styles. Through specialized modules like classical and continental cakes, artisanal breads, chocolate and confectionery arts, and design and sugar craft, candidates learn decorative execution step-by-step. They practice blowing sugar structures, tempering dark chocolate, forming decorative cake showpieces, and baking traditional local items in Asian kuih and desserts. This practice is balanced with nutrition and sensory analysis classes, showing students how heat applications influence taste profiles and dietary breakdowns.
Enterprise Management and Field Placement
Academic learning at the BERJAYA Faculty of Culinary Arts mixes technical kitchen hours with essential small-business operational principles. Students study the commercial side of operations via menu planning and development, kitchen layout and design, introduction to business, and managing people in the service industry. A key requirement before completing the Diploma in Patisserie qualification is the compulsory 16-week industrial internship placement. This term drops students directly into working city bakeries, luxury hotel pastry sections, or artisanal confection shops to manage real commercial production schedules and build industry networks before graduation.
